Introduction

Crispy coated chicken smothered in a marinara sauce and mozzarella cheese. Crispy coated chicken smothered in a marinara sauce and mozzarella cheese.
Number of Servings: 8

Ingredients

    Mix together in a small bowl:
    1/4 cup flour
    1/4 tsp paprika
    1/4 tsp garlic powder
    1/4 tsp black pepper

    In a second small bowl beat until frothy:
    2 egg whites

    In third small bowl:
    2 cups crushed corn flakes

    Dredge 4 boneless, skinless chicken breast cut in half (eight pieces total--you may beat them with a meat mallet so they are flatter and more uniform) in each of the three bowls coating completely (flour mixture, egg, then corn flakes)

    Place in sprayed 8x8 dish.
    Bake for 25 minutes at 350 degrees.
    Cover with 26 oz. jar of spaghetti sauce then top with 3/4 cup mozzarella. Bake for 5 more minutes or until cheese melts.

Directions

Serve with linguine noodles and vegetables. Makes eight servings: 1/2 a breast each.
