My version of pineapple chicken with a little spice and less brown sugar. My version of pineapple chicken with a little spice and less brown sugar.
Number of Servings: 2


    Boneless Skinless Chicken Breast 8 ounces
    Dole Pineapple Tidbits 100% Pineapple juice, 1 can
    Lemon juice, 1/4 cup
    Soy sauce (shoyu), low sodium, 1 tbsp
    Yellow Mustard, 2 tsp
    Pepper, red or cayenne, 1 tsp (more of less to taste)
    Birds Eye Pepper Stir-Fry, 1 cup (or chop 2 bell peppers)
    Brown Sugar, 1/4 cup, unpacked


Preheat oven to 375
In bowl, stir together pineapple with the juice, lemon juice, mustard, shoyu, and brown sugar.
In 9X13 pan, arrange thawed chicken and peppers. Pour the fruit sauce mixture over the chicken and peppers. Now sprinkle with Cayenne and put pan in oven.

Bake for 30 to 40 minutes.
Serves well with brown rice or couscous. Calories will actually be a little less, since most of the sauce stays in the pan. Can cook at a higher temp to absorb more of the sauce.
