Introduction

Really flavorful soup with lots of vegetables. Really flavorful soup with lots of vegetables.
Number of Servings: 8

Ingredients

    Chicken breast, 11.5 oz
    Zucchini, 2
    Onion, 2
    Corn, 12 oz
    Chickpeas, (Yields from 16 oz can)
    Green Peppers, 2
    Vegetable Broth, 3 cups
    Tomato Juice, 3 cups

Directions

Slice the veggies and meat to desired size. Add all ingredients to large pot and simmer for half an hour, until the peppers and zucchini are just tender.

Makes about 8 1.5 cup servings.
