A very quick and easy way to enjoy Eggplant Parmisan A very quick and easy way to enjoy Eggplant Parmisan
Number of Servings: 1


    1 large eggplant, peeled
    2 tablespoons light olive oil
    1/2 cup Italian bread crumbs
    1 jar of Marinara sauce
    1 package of Kraft Fat Free Mozzarella


Peel one large eggplant.
Cube eggplant
Throw into a plastic bag with 2 tablespoons of light olive oil.
Coat eggplant.
Throw 1/2 cup of Italian bread crumbs in the bag. Shake lightly.
Pour into a microwave safe bowl.
Microwave on high for 8 to 10 minutes until eggplant is soft.
Pour into a baking dish.
Pour marinara sauce and fat free mozzarella into baking dish.
Stir ingredients.
Bake for 10 minutes at 425 Degrees until cheese is melted.


Makes 4 servings.
