Ingredients

    1 tbsp olive oil
    1 tbsp white wine vinegar, balsamic vinegar, or lemon juice
    1 tbsp fresh, or dried rosemary
    1 clove garlic, minced
    1 tsp sea salt
    1 tsp fresh ground black pepper

    2 skinless, boneless chicken breast fillets
    1 cup cherry tomotoes

Directions

Mix together olive oil, vinegar/lemon juice, garlic, herbs and spices.
Place chicken breasts in a shallow dish. Pour olive oil mixture over chicken. Cover and marinate in fridge for upto 24 hours.
Pre-heat oven to 400F. Mix cherry tomotoes with chicken mixture. Pour onto a baking sheet. Bake for 15-20 minutes (depending on thickness of chicken), turning once. Check chicken for doneness before serving.
