    *Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 0.25 cup
    *Canola Oil, 2 1tsp
    Mushrooms, fresh, 1 cup, pieces or slices
    *Avacado (3.5 oz - 1/2 avacado), 1 serving
    Red Ripe Tomatoes, 1 cup cherry tomatoes
    green Onions, raw, .25 cup, chopped
    Artichokes, frozen, 1 package (9 oz)
    Chicken Breast, no skin, 12 ounces
    1/8 tsp pepper
    1/4 c. fresh chopped basil
    1 T lime juice
    4 oz green chili peppers


cook quinoa according to package directions

heat oil in pan over med heat. add chicken, mushrooms and pepper, cook until tender.

combine the remaining ingredients in a large bow. stir in mushrooms and quinoa and chicken
