Introduction

This is one of my family's favorites. I like it best when its made with turkey kielbasa, but we've made it with just about ANY kind of meat. You can use alot less meat in this recipe as well. My husband likes it best meater-- but I've made it with only 1/3 cup of meat, and it stretches just fine to feed 4. Great budget saver, and good for leftovers. This is one of my family's favorites. Ingredients

    1 package of Turkey Kielbasa (can use 1/2 a package or less)
    1 c. chopped onion
    2/3 c. chopped bell peppers
    1 stalk of celery, chopped
    1-2 carrots, chopped
    2 cloves garlic, minced
    1 (14 1/2 oz.) can of stewed tomatoes, undrained (can use spaghetti sauce in a pinch, or if you have a husband who doesn't like tomatoes, like mine)
    1 (10 3/4oz.) can of lower sodium chicken broth
    1/2 t. dried thyme
    6-8 drops hot pepper sauce (can add more if you like the heat)
    2 bay leaves
    2 c. white rice
    2 T. dried parsley

Directions

This dish serves 4.

In a large skillet, cook the meat, onion, and garlic until done. Add tomatoes, chicken broth, and rice. Stir once or twice. Add all other ingredients. Stir. Cover and bring to a boil. Lower temperature to a simmer and leave lid on for 15-20 minutes, or until rice is cooked. Take out bay leaves and throw away. Enjoy hot!!
