    4.5-teaspoons active dry yeast

    2-tablespoon brown sugar, unpacked

    1.75-cups water (100-110F)

    3-cups all-purpose flour

    1.5-cups whole-wheat flour

    1-tablespoon vital wheat gluten

    1-tablespoon dough enhancer

    1-tablespoon salt


1. Pour water into a bowl with yeast and sugar. Allow to stand and bubble for 10 minutes to determine if the yeast is good.

2. Add in vital wheat gluten, dough enhancer, 1-cup all purpose flour, wheat flour, butter, and salt. Stir dough until dough comes together into a uniform ball.

3. Stir in enough remaining all-purpose flour to form a stiff dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Cover and let rest for 20 minutes.

4. Place in greased 8-in. x 4-in. x 2-in. loaf pan. Cover and refrigerate for up to 12 hours. Remove from the refrigerator; let stand in a warm place for 30 minutes. Bake at 400 degrees F for 30-35 minutes or until golden brown. Remove from pans to wire racks to cool.

To bake without refrigeration, cover dough and let rise in a warm place until doubled, about 1 hour. Bake as directed.
