Ingredients

    2 medium Zucchini
    12 Medium Shrimp
    1/4 C Lemon Juice
    1 Tbsp Water
    1/4 tsp Pepper
    1/2 tsp Salt
    2 Tbsp Olive Oil
    2 Tbsp Chopped Garlic
    1 Tbsp Italian Parsley
    1 Tbsp Unsalted Butter
    3/4 C Cooked Whole Wheat Pasta

Directions

In a amall bowl, combine lemon juice, water, salt, pepper, stir well.

Heat a large skillet over medium heat. Add oil and coat bottom of pan, add garlic, stir for 30 seconds.

Add zucchini and stir until softened. Add shrimp cook until pink about 2 minutes.

Pour lemon juice mixture around sides of pan. Stir until shrimp are evenly cooked and coated.

Remove from heart and stir in parsley and butter. Serve over whole wheat pasta.

    i thought the lemon was way to overpowering...so unless you LOVE lemon i would maybe use a little less or try something else. - 8/7/09

    This was amazing. I made it with grapeseed oil instead of olive(using a little less) and it still tasted great. I just ate the shrimp and zucchini without the pasta. Next time I plan on using the pasta. Great recipe. I will use it many more times! - 7/24/09
