Introduction

Number of Servings: 6

Ingredients

    1 cup chopped onions
    2 cups black beans
    2 cups tomato sauce
    2 teaspoons chili powder
    1 teaspoon cumin
    salt to taste
    1 cup fat free sour cream
    8 corn tortillas
    5 ounces shredded low-fat cheddar cheese

Directions

Combine first three ingredients and cook until soft. Add beans, tomato sauce and spices. Simmer 15 minutes, stirring occasionally. Line a shallow 2.5 quart baking dish with four tortillas. Spread half of sour cream on tortillas, top with half of bean mixture. Repeat. Top with shredded cheese. Bake at 350 degrees for 25 minutes.
