    1 cup all purpose flour
    1/2 tsp baking soda
    1/2 tsp ground cinnamon
    1/2 tsp ginger
    1/2 tsp nutmeg
    1/4 tsp salt
    1/2 cup brown sugar
    1/4 vegetable oil
    11/2 cup mashed bananas
    1/4 cup unsweetened applesauce
    1 tsp vanilla extract
    1 egg
    1/2 cup roughly chopped walnuts


Makes 12 servings
Preheat oven to 350 degrees.
Grease a muffin pan.
Put flour, soda, spices and salt in a bowl.
In another bowl mix sugar, and oil until well mixed.
Add bananas, apples,vanilla and egg to sugar mixture and beat until combined well.
Add flour mixture to banana mixture in 3 parts, incorporating well.
Fold in walnuts.
Spoon into pan and cook for aprox 25 mins.
