Introduction

Number of Servings: 4

Ingredients

    1 lb. salmon filet, preferably wild or organic, pinbones and skin removed
    8 oz. baby spinach
    1-2 T minced garlic
    1-2 T pinenuts, optional
    Sea salt and white pepper to taste
    1 T extra virgin olive oil
    Sauce:
    1/2 c. plain yogurt, nonfat, Greek is best
    1/2 cucumber, peeled and deseeded
    1 T. freshly chopped dill

Directions

1. Butterfly salmon: cut slit in center and slice through the length of the fish, not going all the way through (so it opens up).
2. Over medium heat, saute spinach, garlic, and pine nuts in olive oil just until wilted. Season with salt and white pepper.
3. Lay the spinach down center of salmon's bottom layer and cover with the top layer of salmon.
4. Bake on a lined baking sheet for 18-25 minutes until firm to the touch, at 350-375 degrees.
5. For the sauce, blend all ingredients in a food processor until combined. Add seasoning if desired. Serve over salmon.
This serves 4, 4 oz. portions.

    What a hit! And so simple too!
    I added fresh lemon juice (one lemon) to the spinach, and served lemon wedges with the fish.

    Will surely make again!
