Low sugar jam without an artificial sweetener. Low sugar jam without an artificial sweetener.
Number of Servings: 48


    6 large figs (about 4 cups slices)
    .25 cups lemon juice
    1 box no sugar needed pectin (1.75 ounces)
    .5 cup white sugar
    .5 water


Put all ingredients but the sugar in a non-stick pot and bring to a boil, mashing figs with a potato masher. Add sugar and boil 1-2 minutes. Put in sterilized canning jars and pressure boil about 10 minutes.
Makes about 1.5 pints (3 little jars) or about 48 tablespoons.
