    1 pound frozen Shreded Potatoes thawed
    4 oz Turkey Sausage, cooked &crumbled
    1 cup slice mushrooms
    1/2 cup shreded cheddar cheese
    1 cupp of egg beaters
    1/8 tsp salt
    1/8 tsp Black pepper
    1/8 cup red pepper, finely chop
    2Tbsp oions, finely choppedped


preheat oven to 350 dregrees F. coat a casserole dish with cooking spray. Spread potatoes around botttom and press up the sides, place in oven and cook for 10 minutes.

Meanwhile, mix eggs beaters, salt,and pepper together.

Remove potatoes from oven and press potatoes downfirmly with a spoonso they are spread out and cover the bottom and sides of the pan. Sprinkle the sausage, red pepper, and cheese in the bottom of the pan, pour the egg mixture over it.
Retun pan to oven and cook until potatoes are crisp and golden brownand the egg mixture is set, about 25 to 30 minutes. Remove from oven and let sit about 5 minutes before serving.
