    6 boneless, skinless chicken breasts
    2 Tbsp. flour
    1/2 cup buttermilk
    1 cups dried breadcrumbs
    1/4 cup ground flax seeds
    1 tsp. dried thyme
    ground pepper
    other seasonings (coriander, paprika, etc.)
    nonstick cooking spray


Preheat oven to 350 degrees.

Put flour in one bowl. Add thyme and about 8 twists of fresh grounds black pepper. Add other seasonings if desired.
Put buttermilk in a second bowl. Put breadcrumbs and ground flax seeds in a third bowl.

Spray a large baking sheet liberally with nonstick spray.

Cut chicken breasts in half. Dip each piece of chicken in the flour, turning to coat both sides. Shake off excess flour, and dip the chicken in the buttermilk, coating both sides. Let excess drip off, and put the chicken in the breadcrumbs, turning to coat. Shake off excess breadcrumbs and put the chicken on the baking sheet.

When all chicken have been breaded, spray the tops with more nonstick cooking spray.

Bake at 350 degrees for 30 to 40 minutes.
