Number of Servings: 2


    1 Egg white
    1 large Egg
    2 T Skim Milk
    1 t Ground Cinnamon
    1 t Honey
    4 slices Sara Lee Delightful Wheat Bread or other light bread, crusts removed
    1/2 C low fat ricotta cheese
    1 C Raspberries
    2 T sugar free maple syrup (fruit syrups are also yummy)


Preheat the oven to 375 degrees.

Whisk together the egg, egg white, milk, cinnamon and honey in a shallow dish.

Spray a nonstick muffin pan with nonstick spray.

Dip each slice of the bread into the egg/milk mixture and press it into the muffin pan, creating a cup.

Bake at 375 degrees for 12 minutes, until crisp.

Meanwhile, in a small bowl, mix together the ricotta cheese and syrup until smooth.

Spoon equal amounts of the ricotta mixture into each of the bread cups and top with berries

Makes 2 servings of 2 cups each.
