I throw this together the night before, and microwave it in the morning. I throw this together the night before, and microwave it in the morning.
Number of Servings: 1


    1 slice rye bread, cut into 1/4 in cubes
    1/4 cup egg substitute
    1 tbsp Parmesan cheese
    1 mushroom, diced
    1/8 cup skim milk


Spray a ramekin with cooking spray.
Layer the bread, mushroom, and cheese in the ramekin.
Beat the egg substitute with the milk.
Pour over the egg over the bread.
Let sit until the egg is absorbed. I put my in the fridge overnight..
Microwave on high to 4 minutes.
It will expand. Place a plate under the ramekin if you are worried about it flowing over.
