Ingredients

    Ingredients:


    4 tsp Olive Oil
    1 med sweet Onion, chopped
    6 cloves Garlic, minced
    1 tap1 cup sliced canned Mushrooms
    1.5 cup Bulgur
    3 cups Fat Free Low Sodium Chicken Broth
    8 oz skinless, boneless Chicken Breast
    1 can Black Beans
    1 tsp Southwestern Seasoning, or to taste


Directions

Preheat oven to 350.

Saute onion & garlic in olive oil. Add mushrooms and chicken. Cook until chicken is almost done. Add bulgur and saute 1 minute. Season with southwestern seasoning blend to taste.

Add chicken broth, bring to a boil. Cover pan and bake 20-25 minutes.

Makes 9 1-cup servings

    This was pretty good, but the recipe needs to clarifications:
    1) Should the bulgur be dry or cooked?
    2) When do I put the black beans in?

    I liked the recipie but the directions were incomplete. I changed it a bit. I decreased the bulgur, increased the chicken, and added carrots and spinach. I also used curry spice instead of taco. It was pretty good and very healthy. - 3/24/11
