Asian inspired pasta salad. Asian inspired pasta salad.
Number of Servings: 8


    5 TB natural peanut butter
    2-3 TB rice vinegar
    1 TB water
    1-2 TB lite soy sauce (I like Kikoman)
    1 tsp fresh lime juice
    1 tsp minced garlic
    1/4 tsp cayenne pepper
    1 tsp sesame oil

    salad ingredients
    4 cups fresh broccoli florets
    1 cup chopped red bell pepper
    8 oz whole wheat fusilli (corkscrews)


In large bowl combine all sauce ingredients. Add cooked pasta and red bell pepper. Set aside.
Steam fresh broccoli fro 2 minutes until tender crisp. Drain and add to pasta. Mix thoroughly. Can serve warm as a meal or chill in the refrigerator. Can also top with sesame seeds. Delicious served with grilled chicken.
Makes 8 - 1 cup servings.
