Introduction

Wonderful side dish! Wonderful side dish!
Number of Servings: 4

Ingredients

    1 tbsp butter
    ~2 leeks (white parts and lower greens only)
    3 medium zucchini
    Garlic salt

Directions

Finely chop leeks and zuccchini. Melt butter, add leek. Saute for 2 minutes, add zucchini, salt and garlic. Cover, reduce heat to medium low and cook for 20 minutes. Uncover and cook on medium high until most of the liquid evaporates. If desired, you can sprinkle with mozzarella cheese.

  • I felt cooking this for 20 min left it kind of mushy. Was very tasty served over baked salmon. Probably would use again but less cooked to give it a better texture. - 8/15/09
