    500g kangaroo steak, cut into 3cm pieces
    1/4 cup dried apricots, halved
    1/4 cup pitted prunes, halved
    200ml chicken stock
    1 med onion, chopped
    2 cup frozen green beans,
    1 1/2 tsp Tunisian spice mix, or Harissa spice mix (or to taste)
    2 Tbs honey
    2 tsp red wine vinegar


Place kangaroo, stock, onion, and spices in a saucepan over high heat. Bring to the boil. Reduce heat to medium-high and cook, covered with a tightly fitting lid, for 40 minutes, add apricots, prunes and beans and continue cooking for 20 - 30 min or until meat is cooked.
Stir in honey and red wine vinegar and simmer, uncovered, for 5-8 minutes or until sauce thickens slightly.
Serves 6
