Introduction
Not your average cabbage rolls. No tomato sauce - sauerkraut instead. Turkey instead of ground beef and sausage, so total fat is much lower. Not your average cabbage rolls. Ingredients

2 pounds ground turkey
1 cup onion, finely chopped
.75 cup uncooked white long grain rice
1 cup water
1 tsp. salt
1 tsp. ground black pepper
2 tsp. paprika
2 tsp minced garlic
1 large head cabbage
1 - 32 oz. jar sauerkraut
Directions
-Boil large pot of water. Wash and core cabbage. Drop into boiling water. As leaves separate from head, remove from pot and drain.
-Meanwhile, mix together all other ingredients except the water and sauerkraut.
-Place small amount of meat mixture into each cabbage leaf. Roll from bottom and tuck in sides (removing the large vein will make this easier).
-Place half sauerkraut in bottom of large pot. Arrange cabbage rolls, seam side down, over the sauerkraut. Place remaining half of sauerkraut over cabbage rolls.
-Pour 1 cup water over all and bring to a boil. Lower heat, simmering 1 and a half to two hours, adding water if necessary to prevent scorching.
-Can be served with sour cream, but of course, this adds calories and fat!
