    Pasta (uncooked) 300g
    Prawns 300g
    3 tbsp Olive oil
    1 onion, chopped
    3 cloves Garlic, crushed
    1 red chilli, thinly sliced
    pinch Saffron dissolved in a little hot water
    chopped handful of parsley


Whilst cooking the pasta, prepare the prawns;

Heat 1 tbsp olive oil in a large saucepan over a medium-high heat, fry the onion to soften, then add the sliced garlic and chilli and fry for 1 minute, taking care not to let the garlic get too brown.

Add the saffron and the prawns, cover with a lid cook for a minute or two until prawns are thoroughly heated through. Season with salt and lots of freshly ground black pepper.

Drain the pasta, tip it into the pan with the prawns and cook for another minute until the pasta and prawns are well combined. Toss the pasta mixture with the other 2 tbsp olive oil. Serve, sprinkled with fresh chopped parsley.
