    1 tbsp Extra-Virgin Olive Oil
    1.5 lbs Chicken Breast, skinless, cut in bit size pieces
    .5 lb Shrimp, peeled and deveined
    .25 lb Turkey Kielbasa, cut into .25 inch thick slices
    1 Onion, chopped
    1 Bell Pepper, chopped
    3 Garlic Cloves, minced
    1 (14.5 oz) Can Diced Tomatoes
    1.25 Cups Reduced-Sodium Chicken Broth
    .75 Cup Long Grain Rice
    8 Small Stuffed Green Olives
    .5 tsp Saffron Threads, crushed
    .125 tsp Cayenne


1. Heat oil in large nonstick skillet over medium-high heat. Add chicken and cook until browned, about 6 minutes. Transfer chicken to a plate. Add shrimp to skillet and cook until pink, about 2 minutes. Transfer to separate plate. Add kielbasa to skillet and cook until browned, about 5 minutes. Transfer to plate with chicken.

2. Add onion, bell pepper and garlic to skillet; cook, stirring occasionally, until softened, about 4 minutes. Add tomatoes, broth, rice, olives, saffron and cayenne; bring to a boil. Add chicken and kielbasa; return to a boil. Reduce heat and simmer, covered, about 15 minutes.

3. Add shrimp to skillet and simmer, covered, until chicken and kielbasa are cooked through and shrimp are opaque in the center, about 7 minutes. Fluff the mixture with a fork.
