Introduction

These are made with unsweetened applesauce so they're super moist. I also try to make lower sugar foods for my daughter. This has about 10 grams of sugar per muffin. Ingredients

    2 Cups Unsweetened Applesauce
    1/2 Cup Granulated Sugar
    2 Large Eggs
    1/2 tsp Baking Soda
    1/4 tsp Salt
    2 tsp Vanilla Extract
    2 Cups Fresh Blueberries

Directions

Mix all ingredients with mixer until well blended adding blueberries last. Pour into muffin tins or bread pan and bake at 350* for about 35 minutes for muffins/1 hour for bread or until baked through. Makes about 15 muffins or 1 loaf of bread.

    How much flour do you use? I made these, but I just guessed at the flour. They were pretty good though. - 7/22/09
