    1/2 cup Oil and Vinegar Salad Dressing
    4 Chicken Breasts, no skin - 6 ounces each 1/2 cup Bread crumbs, dry, grated, Italian seasoned
    1/2 tbsp Olive Oil
    1 can (28oz) Stewed Italian Tomatoes
    1 can (6oz) Tomato Paste
    1/3 cup Parmesan Cheese, grated
    1/3 cup sliced Black Olives
    1/2 tsp Red pepper flakes


Marinate chicken with dressing for 1 hour - optional. Take chicken from marinade and coat with bread crumbs. Cook chicken in hot oil over medium heat - 6 minutes per side or until no longer pink. Remove and keep warm. Add undrained tomatoes, tomato paste, olives and red pepper flakes to skillet. Simmer 10 minutes, stirring occasionally, until thickened. Sppon sauce over chicken and sprinkle with cheese. Serve with pasta and garnish with fresh basil.
Note: Use low sodium or no salt added tomato paste and stewed tomatoes to reduce sodium in recipe.
