Introduction

Tasty and richly flavorful summer side dish great served with any grilled meat. Tasty and richly flavorful summer side dish great served with any grilled meat.
Number of Servings: 3

Ingredients

    8 ounce package of mushrooms
    2.5 cups summer squash cut into one inch chunks
    1 small onion
    Salt .5 tsp
    Pepper .33 tsp
    Oregano, ground, 1 tsp
    3/4 cup halved grape tomatoes
    8 tsp parmesan cheese
    1/2 cup white wine
    cooking spray

Directions

Halve the onion and then slice lengthwise, cut mushrooms into chunks and then add both to medium saute pan coated with cooking spray. Add oregano and cook until onion is softened and mushrooms are slightly brown. Add wine cover and simmer for about ten minutes stir a few times. Uncover and add squash and tomatoes and cook until softened about 8 minutes. Season with salt and pepper and parmesan cheese.

Makes about 3 servings, 1.25 cups each.
