Introduction
I found this recipe online, though I altered it just a tad. I have the nutrition as 1 serving, but it could be split into 2 small servings.The original calls for steel cut oats, but rolled oats makes it a quicker breakfast, as well as being something that's more likely to be in the cupboard. :) I found this recipe online, though I altered it just a tad. Ingredients

1/2 C water
1/4 C quinoa
1/4 C rolled oats (I use old fashioned)
1/4 C crushed pineapple, or pineapple juice
1 T brown sugar or molasses
Raisins or other dried fruit to taste (not in nutrition info)
Directions
Rinse grains (optional).
Add water, brown sugar and quinoa to a small pot. Bring to a boil and then lower heat to a simmer for 10 minutes.
Add oats and fruit and simmer an additional 5 minutes, or at least until oats are cooked and liquid is absorbed.
I like to add cinnamon to mine.
Makes 1 serving (approx. 1 to 1 1/2 cups.)
