Ingredients
-
1 cup of Flour
1/2 cup of Whole Wheat Flour
1 1/2 teaspoons of Baking Powder
1/4 teaspoon of Baking Soda
1/4 teaspoon of Cinnamon
1/8 teaspoon of salt
1 egg
1 cup of mashed banana
3/4 cup of Ideal No calorie Sugar Substitute
1/4 cup of unsweetened applesauce
Directions
1. Preheat the oven to 400, use butter Pam spray and grease three mini loaf pans.
2. In a large bowl, mix the first six ingredients well.
3. In a smaller bowl, mix the remaining ingredients.
4. Mix together the wet ingredients with the dry ingredients in the larger bowl, may be chunky.
5. Pour batter into the loaf pans equally and place in the oven. start at 20 minutes - if it isn't done - add a few more minutes until it reaches desired golden brown or when toothpick is not wet.
6. Remove from oven and let stand and cool.
7. Enjoy :)
Tip: If you cut each loaf into eight slices, you can use light butter in each side and lightly fry it in the pan to give it a little crunch :)
Tip: Need to indulge in your sweet tooth? This guilt free bread can be sprinkled with 30 chocolate chips per loaf - there are 70 calories per 30 chocolate chips, divided by eight - - adds less than 10 calories per slice :)

Very good, moist. Don’t understand the mini loaf pans, made in a 8.5 x 4.4 pan. Made the following changes: only had 1 banana so made it up with applesauce, added vanilla and walnuts, baked an additional 10 minutes. I juggled numbers and a 1/2” slice is approximately 56 calories (when logging, a - 2/9/21

Im making this. Did a little more tweaking. I used vanilla greek yogurt for eggs. Used trvia brown sugar. Add extra cinnamon plus pumpkin spice and nutmeg. I double the recipe and got two large bread pans. Add white choc chips about 40 since i figured i got large loafs. Now waiting. Haven't tasted y - 7/15/16

I made muffins out of this recipe. I did a third of the recipe and got 7 (fairly small) muffins in a normal tin. I used splenda and reddiegg (like egg beaters) and they came out a little chewy but that might be because I forgot about them in the oven for a little bit. Besides that, very nice! - 2/11/13

I used for this recipe 1+1/2 cups of whole wheat flour, a tablespoon of 1+1/2% fat natural yogurt and about 3 tbsp. of natural oil free sugarfree granola. DEFINATELY will go back this recipe, it works perfectly as a basis that can be easily modified as well as it stands on its own. Thumbs up. :D - 1/12/10
