    6 large eggs
    4 c. Splenda
    4 tsp. Vanilla extract
    1 c. Olive Oil
    6 c. Zucchini shredded
    2 tsp. Baking Powder
    2 tsp. Baking Soda
    1 tsp. Salt
    2 c. Crushed Pineapple
    3 c. Whole Wheat Flour
    3 c. White flour
    1 c. Wheat Germ (prefer Kretschmer)
    1 c. unsweetened applesauce


Preheat oven to 350.
Drain pineapple well.
Beat together eggs, Splenda, vanilla, applesauce and oil in large bowl. Stir in well-drained zucchini.
In separate bowl, combine flours, wheat germ, baking powder, baking soda, and salt.
Add to zucchini mixture.
Add pineapple and mix well.
Pour into greased and floured 9"x5" loaf pan.
Bake 55-60 minutes, until wood pick inserted in center comes out clean.
Makes 8 slices from one 9"x5" loaf pan
