Ingredients

    2 c watermelon (about a 2.5 lb piece)
    2 tomatoes (about 1.5 lb) quartered
    2 Tbl unsalted almonds, ground
    1/2 shallot, quartered
    1 Tbl lemon juice
    1 Tbl red wine or sherry vinegar
    1 tsp olive oil
    2 Tbl feta, crumbled
    1 Tbl black olives, pitted & chopped
    2 tsp fresh mint

Directions

Blend watermelon, tomatoes, almonds, shallot, lemon juice, vinegar and olive oil in a food processor until smooth. Divide amoung 4 bowls and top with feta, olives and mint.
