Ingredients

    1 small onion, thinly sliced (~ 75gm)
    2 tsp packed brown sugar
    1 tablespoon balsamic vinegar
    Pinch of salt
    1 tsp minced fresh rosemary
    3/4 cup blueberries, fresh or frozen

Directions

In a skillet coated with cooking spray over medium heat, cook the onions until softened, about 5 minutes.

Add the brown sugar and vinegar, stirring to dissolve. Add 1/2 cup water and the salt, then cook over medium heat until the onions are softened and the liquid becomes syrupy, about 20 minutes. Add the blueberries and rosemary, and another splash of water. Bring to a boil then simmer for about 5 more minutes, to cook the berries.
