Ingredients

    1 lb. chicken breast tenderloins
    1 tbsp. extra virgin olive oil
    2 red peppers, thinly sliced
    1 large onion, thnly sliced
    2 tbsp. hot paprika
    1/2 cup dry white wine
    1/2 cup fat free chicken broth
    1 1/2 cups crushed tomatoes
    1/4 cup reduced fat sour cream
    2 cups cooked whole wheat pasta, spagetti, fettucine or linguini

Directions

Start water for pasta and cook. Meanwhile, heat 1 tbsp extra virgin olive oil on med-high heat in large saute pan. Salt and Pepper chicken. Add to hot pan, turning once to brown on both sides. Set aside. Add red peppers and onions to pan on medium heat, cooking until softened, about 5 minutes. Add paprika, stirring until fragrant, about 30 seconds. Add wine, cook until almost evaporated, about 1.5 minutes. Add crushed tomatoes and chicken broth, bring to a boil. Cut chicken into 2 inch pieces, add chicken and any accumulated juices to pan. Reduce to a lively simmer, spooning sauce over chicken and cook, approx. 6-8 minutes more. Remove from heat, stir in sour cream. Serve over 1/2 cup of wheat pasta.

    Very Good
    Eatingwell.com has great recipes. This one was good. Very easy to make also. Not as spicy as I would have liked but did not have the hot paprika. - 2/28/11
