Number of Servings: 6

Ingredients

    4 oz whole wheat spaghetti broken into 2-3 inch pieces
    1 egg
    1 cup low fat sour cream
    1/4 cup grated Parmesan cheese
    2 cups shredded low fat Monterey Jack or Colby (or mix) cheese
    1 package (10oz) frozen spinach thawed and drained
    Canola oil cooking spray
    (optional: french fried onions)

Directions

Cook the spaghetti, per the package directions.

Preheat the oven at 350 degrees. Spray a 2 qt baking dish with canola oil spray lightly.

In a large bowl beat the egg and add sour cream, spinach, Jack/Colby and Parmesan cheese. Drain the spaghetti and add to the mixture. Mix well.

Pour mixture into greased pan. Cook for 30-35 minutes until heated.

Optional: Apter plating and before serving top with french fried onions broiled for 30 seconds (it will add calories not calculated in the recipe).

Great quick dinner with left-overs for lunch
