Ingredients

    1 lb chicken, cut into chunks
    3 leeks, cleaned and sliced thin
    2 celery stalks, sliced thin
    1 tomato, chopped
    10 basil leaves, chopped
    3 oz wine

Directions

Put all veggies and chicken into large, nonstick skillet. Add wine and cover to help steam.
Add basil when chicken is almost cooked through.

  • I'm a missionary and not allowed to have wine in my home. I tried apple cider vinegar as a replacement, but it was a bit powerful. I will try chicken broth next time. - 9/11/19
