A wonderful, moist breakfast bread! A wonderful, moist breakfast bread!

    3 eggs, beaten
    2 c. sugar
    1 c. canola oil
    2 c. grated zucchini
    2 t. vanilla
    1/2 c. chopped walnuts
    1 c. whole wheat flour
    2 c. white flour
    1 t. salt
    1 t. baking soda
    1 t. baking powder
    2 t. cinnamon


Mix eggs, sugar, oil, zucchini, and vanilla in a bowl. Sift flour, salt, baking soda, and powder and cinnamon together. Add to liquid mix, stirring to moisten. Fold in nuts. Pour into 2 greased and floured pans. Bake at 350 degrees for 50 min. until a toothpick comes out clean.
Makes 24 slices.
