    1-1.5 lbs broccoli, raw or lightly steamed
    1 large tomato, diced
    1/2 c light mayonnaise
    1/4 c minced red onion
    1 tbs lemon juice
    salt & pepper to taste


Cut broccoli into pieces, separating flowers from stems. Put stems in cold water, bring to boil and simmer 5 mins. Add flowers & again bring to boi. Cover & shut off heat. When crisp-tender,about 5 min, drain thoroughly and chill in cold, icy water until cooled completely. Drain thoroughly and put in a large bowl. Sprinkle lemon juice over broccoli and toss gently. Fold in the remaining ingredients. Serve chilled. (note-Broccoli may be steamed. The object is to just tenderize it and retain that bright green color.)
