    3 c. shredded zucchini
    3/4 c. sugar
    1/3 c. vegetable oil
    1/3 c. lowfat buttermilk
    1 teaspoon vanilla extract
    4 large eggs
    3 c. whole wheat flour
    2 teaspoons baking soda
    1 teaspoon salt
    1 teaspoon cinnamon
    1 teaspoon ground cardamom or 1/2 teaspoon ground cloves
    1/2 teaspoon baking powder
    1/2 c. walnuts, chopped


combine sugar, vegetable oil, buttermilk, vanilla, eggs,. Stir until blended. In a separate bowl, mix the flour, baking soda, salt, cinnamon, cardamom, and baking powder. Add this mixture to the wet ingredients and stir just until blended. Stir in the shredded zucchini and walnuts until evenly distributed. Fill 24 greased muffin cups 2/3 full and bake 15 minutes or until toothpick inserted in center comes out clean.
