Ingredients

    Egg, fresh, 9 large
    Asparagus, fresh, .5 cup
    Mushrooms, fresh, 1 cup, pieces or slices
    Shrimp, cooked, 8 oz
    Shredded Hash Browns (frozen and thawed), 1 cup
    Onions, raw, .25 cup, chopped
    Milk, nonfat, 1 cup
    Parmesan Cheese, grated, .25 cup
    Cheddar or Colby Cheese, Low Fat, .5 cup, shredded *Extra Light Olive Oil, 1 tbsp
    Butter, unsalted, 1 tbsp
    *Garlic Salt 0.5 tsp
    Pepper, black, 1 tsp


Directions

Saute onions, asparagus and mushrooms in oil and butter until tender.

Place all ingredients in a medium baking dish that has been sprayed with non-stick spray.

Place baking dish in a water bath and bake on 350 degrees for 1 hour or until set.

Makes 12 servings

Water bath: Place baking dish inside another baking dish with hot water halfway up the side of the inside dish.

Variations: Use turkey sausage or other cheeses, other vegetables will also work.
