    1 T. olive oil, 2 yellow squash, 2 zucchini, 1 onion, 1 green bell pepper, 2 cloves garlic, 1 16-oz. can tomatoes, 1/2 t. basil, 2 t. oregano, salt and pepper to taste, 1/2 c Parmesan cheese


Saute squashes, onion, garlic, and pepper in olive oil until either al dente or soft, whichever you prefer. Add tomatoes, herbs, and spices. Pour into glass dish and bake for 20 minutes. Remove from oven and sprinkle Parmesan over top. Return to oven for 10 minutes or until Parmesan is melted. Makes 6 servings.
