    2 4 oz. salmon fillets
    1 T olive oil
    1 large onion, chopped
    1 sweet red pepper, chopped
    1 cup mushrooms, sliced
    2 cloves garlic, chopped
    3/4 cup Trader Joes frozen artichoke hearts
    2 T chopped basil
    the juice of 3 lime wedges
    sprinkle of pepper
    1 cup Trader Joes Thai style lime rice


Preheat oven to 400 degrees

In a dutch oven, saute the onions, peppers, mushrooms and garlic over medium heat for about 5 minutes, until just soft. Stir in frozen artichoke hearts.

Place salmon fillets on top of vegetables, and sprinkle with basil and pepper. Sprinkle fish with lime juice,and bake for 15 - 20 minutes, until firm.

serve by laying half of the veggies on to a bed of half of the rice, topped with a salmon fillet.
