    * *Flour, white, 4.5 cup
    * Baking Soda, 1 tsp
    * Salt, 1 tsp
    * Scallions, raw, 4 medium (4-1/8" long)
    * Water, tap, 2 cup (8 fl oz)
    * *Canola Oil, 2 tsp
    * *Canola Oil, 1 tbsp


Makes 24 servings of 1 cake per serving.

1. mix 4 cups flour and the baking soda, salt and chopped onion together in a bowl. Set aside remaining 1/2 cup for later.
2. add the water and 2tsp oil to flour mixture to make a dough.
3. Place dough on a lightly floured surface and knead for 5 minutes. This is where you use the remaining 1/2 cup flour.
4. divide the dough into 24 equal pieces
5.flatten dough pieces with the palm of your hand on a lightly floured surface.
6. heat a non-stick pan on medium heat
7. lightly brush both sides of onion cake with oil then place them on hot pan and cook until golden brown. About 1 to 2 minutes per side.
