Introduction

Using Tuscan White Bean Dip as the base, this vegetarian sandwich packs in the flavor and nutrients! Using Tuscan White Bean Dip as the base, this vegetarian sandwich packs in the flavor and nutrients!

Ingredients

    2 slices whole wheat bread
    Start grilling 2 thin slices of a yellow summer squash (crookneck) that has been barely brushed with olive oil
    Spread with 2 T. Tuscan White Bean dip, 1 T. on each side (see Tuscan White Bean dip recipe)
    Slice a Roma tomato and add to one side. Lightly salt it to taste. A little pepper would be good too.
    To the other side add Romaine lettuce
    Finally, add the grilled squash, put together and enjoy!
