This is my new favorite lunch. So easy, good for you, and filling! This is my new favorite lunch. So easy, good for you, and filling!
Number of Servings: 1


    Brown rice (any kind, I used short grain), 1 cup
    Olive Oil, 1 tsp
    Small onion (1/2) chopped
    Red Bell Pepper (1/4) chopped
    1 large carrot chopped
    1 large celery stalk chopped
    Garlic powder 1/2 tsp
    Oregano 1/2 tsp
    Salt and pepper to taste


Cook the brown rice according to instructions (it takes me about 30 minutes to make mine) Make enough to equal one cup of cooked brown rice.
Chop the veggies.
Heat up the olive oil in a big pan and sautee the vegetables, stirring occasionally on Medium High. Once the veggies begin to get soft, lower heat to Medium and add garlic powder, oregano and salt and pepper to taste. Stir and let cook another 5 minutes.
Put one cup of cooked rice on plate and put the veggies on top and enjoy! Simple but delicious.
