    3/4 cup canola oil
    4 TBSP yellow mustard
    2.5 TBSP honey
    1 tsp sugar
    1/4 cup fresh dill, finely chopped


1. Chop dill and set aside
2. Mix mustard, honey and sugar in a medium-sized bowl until well-combined.
3. Whisking constantly, add canola oil in a slow, steady stream until all oil is added and the viniagrette is emulsified.
4. Stir in dill. Chill and serve cold.

You can omit the sugar and add a little more mustard if you prefer a zingier dressing. Substituting dijon mustard and bringing down the honey yields a milder flavor, or substitute creole mustard for a little heat.

A little goes a long way with this flavorful dressing - the recipe will yield approximately 15 servings of 1.5 to 2 TBSP each. Goes well with fish; particularly salmon salad.
