Filling and sweet, I am taking those dense and moist muffins on the road! Texture is very moist, would probably make a nice pudding, served warm with a dollop of cool yogurt and some fresh berries. Ingredients

    * Wheat bran, crude, 1 cup
    * *Whole Wheat Flour, 0.5 cup
    * Brown Sugar, 0.5 cup, unpacked
    * Baking Soda, 1 tsp
    * Baking Powder, 0.5 tsp
    * Salt, 0.25 tsp
    * Cinnamon, ground, 1 tsp
    * Banana, fresh, 2 medium (ripe and mashed)
    * Apples, fresh, 1 medium (peeled and shredded finely)
    * Raisins, 0.25 cup (not packed)
    * Milk, 2%, 0.25 cup
    * Egg, fresh, 1 large
    * Vanilla Extract, 0.5 tsp

Directions

Preheat the oven to 175C. Combine the dry ingredients in a large bowl, including the raisins. In a separate bowl, mix the wet ingredients thorougly. Combine the dry and wet ingredients without overworking and pour into muffin tin (approx 2 scant tbsp per muffin). Bake for 20-25 min until risen and set.
Leave to cool.

Makes 12 muffins. As I made them in silicon mould I don't know if they would stick to paper.

    I used original Fiber One instead of wheat bran, 1 cup white all purpose flour instead of 0.5 cup whole wheat, 1 cup of milk instead of 0.25 cup milk, and 0.5 cup unpacked raisins to 1 cup unpacked.

    They turned out very moist. They were small muffins. My changes increased calories to 150/muffin.

    Tried these and my whole family loves them ( even the grand kids). I substituted .5c applesauce for the apples I didn't have and oat bran/oatmeal when I ran out of wheat bran. Great recipe. - 9/28/09

    Very moist, nicely toothy. Two servings for breakfast keep me full for hours. Seems like a good basic recipe that would lend itself nicely to variation, too: pureed pumpkin in place of banana, say. I've also tried adding whey protein with good results. - 10/22/12

    I want to try making these even lower in calories by omitting raisins (I think maybe I would use blueberries as they are bigger and add a bit more volume with less calories), replacing the milk with water, or at least almond milk (20 cal/0.5 cup), and a couple egg whites vs. the whole egg. - 8/31/12

    SO GOOD! My 3 year old gobbled one up and was looking for more and she hates EVERYTHING! Because of that, I omitted the raisins and added 1/4 cup of miniature chocolate chips which was more than plenty to give a little chocolaty goodness. So moist and tasty! Thanks! - 4/19/11

    Very moist- much like the texture of a good bread pudding. We don't like raisins, so I didn't add those. I used 1c All Bran cereal and used 1/2c natural apple sauce rather than grating an apple. Totally plan to use again and again! - 3/29/11

    We loved these!! I used a little extra cinnamon and used cherry crasins instead of raisins. I also dropped a little extra milk in there.
