Introduction

Ingredients

    48 oz. of non-fat chicken broth (you can add another can so it isn't as thick)
    6 cups red (or other) potatoes, cut into bite size pieces
    2 cups chopped celery
    2 bunches of scallions, chopped
    32 oz. frozen corn
    1 package imitation crab (1 pound) cut into bite size pieces
    1/2 cup fat free sour cream
    2 tbs. lemon juice
    Old Bay seasoning and salt and pepper to taste

Directions

Boil the broth, potatoes and celery in a large pot or dutch oven 8 minutes. Add scallions and frozen corn. Simmer 10 minutes. Remove 2 cups and puree in a blender. Or use an immersible blender in the pot. Add the imitation crab, sour cream and lemon juice and heat through. Season with salt and pepper and seasoning.

You can substitute low fat sour cream; nutritional info is calculated for fat free.

Makes about 10 2-cup servings.

    this soup is very good, but the imiatation crab makes it a little too sweet for me. Very rich and filling though, and this recipe makes an absolute ton.. if you're not feeding a crowd, plan to cut it in half, or plan on freezing half for a later date. I added red pepper flakes to jazz it up a bit. - 6/20/11

    This looks yummy, and easy...making this one tonight.
    Made this one...totally awesome. I added some orange bell pepper and some sweet onion, a touch of salt. My picky husband even wants it again.
    Also, topped with a couple of crispy slices of turkey bacon. Yum.
