Introduction

A tasty, healthy recipe. Tastes a bit like stir fry my husband says :) I use a spice mixture called Parsley Patch from Costco. It consists of garlic, oregano, rosemary, basil and red pepper, orange peel, onion, parsley, paprika and celery. Very good stuff. Comes in a large container A tasty, healthy recipe. Ingredients

    Boneless Skinless Chicken Breasts
    Red Bell Pepper
    1/2 Onion (Vidalya or Sweet)
    Parsley Patch Seasoning
    Olive Oil
    1 fresh lemon juice
    Quinoa
    Salt and Pepper to taste

Directions

In a pan put about 1/4 cup of olive oil and saute 1 red bell pepper sliced up and 1/2 onion sliced up. Remove bell pepper and onion and set aside. I use frozen chicken breast. Place chicken in same pan over medium heat. Sprinkle Parsley Patch over chicken and squeeze one half lemon over. Cover. Flip chicken every 5 mins. for about 25 min total or until chicken is cooked thoroughly. For the last five minutes add back the red bell pepper, and onion and olive oil mixture. While chicken is cooking cook Quinoa with water and 1/2 fresh squeezed lemon and Parsley Patch. I cook my Quinoa in the microwave for about 10 minutes.

To serve: Place Chicken Breast and red pepper, onion mixture over the quinoa. Top with chilled, fresh tomatoe and squeeze some fresh lemon juice on top. Enjoy :)
