Number of Servings: 4

Ingredients

    * Cauliflower, raw, 2 cup
    * Shallots, 3 tbsp chopped
    * Onions, raw, .3 cup, chopped
    * Carrots, raw, 1 cup, chopped
    * Turnips, 1 cup, cubes
    * Potato, Yellow-flesh (2 medium)
    * Lemon juice, 1.5 tbsp
    * Garlic Minced, 2 tsp
    * Salt, 1 tsp
    * Olive Oil, Extra Virgin, 1.5 tbs
    * Rosemary, .5 tsp
    * Thyme, fresh, 1 tsp

Directions

Chop veggies into bite-sized pieces and place in oven-safe roasting pan. Drizzle oil over top and sprinkle with salt and herbs.

Roast 30 min at 375, turning every 15 minutes

Roast 15-20 more minutes at 425 until caramelized

Makes 4 servings.
