    1 medium onion
    10 ripe tomatoes
    1 bunch fresh basil
    1 tablespoon olive oil
    3 tablespoons balsamic vinegar
    1/4 teaspoon salt


Slice onion and chop fresh basil. Place in baking pan. Quarter and seed tomatoes and add to pan.
Sprinkle olive oil, balsamic vinegar and salt over mixture and stir to combine.

Bake at 300F for 2 hours, stirring occasionally, until tomatoes are soft and wilted. There should be some liquid in the pan. Turn off oven and let it cool off with the pan still inside. The liquid will disappear as the mixture cools.

Serve with whole wheat crackers or whole grain toast points with cream cheese (if desired).
